Philosophy
"We have set ourselves the goal of making wine an expression of our thoughts, we discuss it before we press it." First a vision, then pure craftsmanship, the Black Edition became our prestige line. She gives us the necessary freedom to experiment and challenges us to push the limits with our favorite grape varieties every day.
Processing/expansion
Previously strongly influenced by maceration time (48 hours and more) and wood, we wanted to rethink the grape processing and cellar as part of the organic conversion. All of our experience from the last 15 years is brought to bear here, and different practices are applied depending on the character of the vintage. Very often different at the same time. Everything is possible, from whole-cluster pressing to 48-hour aroma extraction to mash fermentation without the use of SO2. Gentle craftsmanship, the wines are only moved by gravity and are usually not even filtered. Spontaneously fermented in 500l oak barrels without temperature control and then stirred and stored on the yeast for a very long time. The fine mineral-spicy aromas of this Grüner Veltliner should combine with the delicate wood and yeast notes and emphasize finesse and individuality.
